Pomi-licious

DSC_0005nnI admit, I’m a Pomi addict. Somehow, someway, Pomi manages to make their packaged tomatoes taste fresher and more flavorful than ones right from the store. There must be something in that Italian water.  Bonus points, zero ingredients added and non-BPA packaging.  Plus, I just love being able to always have tomatoes on hand.nnI’m also really digging these Dorot basil cubes nowadays. I never seem to be able to use up a whole bunch of fresh basil & I haven’t gotten around to properly trying to grow my own herbs (one day!) so these little frozen portions work perfectly.nnHere, I used Pomi as the the base for this delish veggie stew. Zucchini, summer squash, cauliflower & the filling nutty goodness of wheat berries round out the meal.nnDSC_0007nnDSC_0011
