Easy peasy, literally.

DSC_0056_1nnSo delish, so simple. I sauteed an onion for a few minutes, added two cups of my homemade veggie broth & three cups or so of frozen peas. Let it simmer for just a bit and then pureed with an immersion blender. Tossed in salt, pepper & a teaspoon of lemon juice at the end as well as a dollop of coconut yogurt for a nice creamy coolness. Then served it up with some Wasa flatbread for a complete lunch. Mmmmm, mmmm, peas.
